Parsnip Tender and True (Pastinaca sativa) are long, smooth-skinned, exhibition quality roots with excellent flavour. Leave these parsnips in the ground until they are required as the frost will improve the flavour. A good source of vitamin C and folate these work well mashed, boiled or roasted. You can harvest these plants from October to February. They thrive best in partial sunlight and like light, fertile soil to grow to their full potential.
