He's a multi-award-winning cocoa maestro who has been described as "the Heston Blumenthal of the chocolate world" and whose clientele includes royalty Michelin-starred restaurants luxury hotels and now Harvey Nichols. Using his scientific background he turns ethically sourced single-origin cacao into indulgent chocolate with a mesmerising purity.
