Made without flour, these delicious biscuits are the perfect gluten-free pick me up to be enjoyed with a warm cup of hot chocolate or a strong aromatic coffee.; Founded in 1685 as a beeswax candle factory for the local pilgrimage church, the Metzer Lebkuchen quickly developed into a seal of quality for the Viennese Lebkuchen world. The original Lebkuchen has been made in the same way for centuries with a secret recipe made exclusively from pure Austrian bee honey, rye and wheat flour and raw sugar. The dough goes through a delicate and complex process where it is "cooked" and then stored with a maturation of up to 6 months, similar to that of wine or sourdough. This makes the original Lebkuchen naturally durable, soft and particularly juicy.;; Metzger & Söhne pralines have also been made in the same way for centuries. Layers of soft Lebkuchen filled with delicate marzipan and natural fruit and nut fillings encased in chocolate.
