An AngloSaxon custom of the New Year, the wassail was a toast from a local leader or dignitary: waes hael (wishing you good health), answered by drink hael (drink well). Traditionally accompanied by songs and a mulled ale drink the singing is thought to be the origin of doortodoor carol singing at Christmas.
