This exquisitely aromatic, perfectly balanced coffee is bound to be appreciated by true coffee connoisseurs. The flavour palate includes some of the most popular coffee tasting notes: chocolate, cardamom and black tea. This remarkable coffee originates from a Colombian farm owned by Nestor Lazo. Lazo started out as a picker working under a different farmer, but careful saving ultimately allowed him to buy his own farm, which he named "El Rubi". El rubi is Spanish for "ruby", one of the world's most luxurious gemstones: Lazo chose this name for his farm because he wanted it to reflect his dream of striving for something unique and truly unmatched in the world of coffee.When Colombian coffee farmers noticed the effect leaf rust started having on their crops, they were soon lead to the Pink Bourbon variety, a subspecies that is rust-resistant and produces coffee of an excellent quality. The San Adolfo area in Huila, where this coffee is produced, is known particularly well for exotic varieties like this one: the farmers of this region have always been brave enough to experiment. More often than not, these experiments lead to better income for them and extraordinary flavour experiences for lovers of specialty coffees. These beans have gone through a special double fermentation process: they were fermented together with their cherries for the first 20 hours, then they were depulped and left to ferment for another 40 hours. To complete the process, the beans were sun-dried on African drying beds for the next 18 days.The supply of this coffee is extremely low, which is why it belongs to our Limited Edition line.Due to its exceptional quality and taste, this coffee is marked as Specialty.
