This chef's knife has fine, hand-ground blades that are extremely light and thin and offer a great cutting feel that is not possible with chunky, mechanized-ground blades. The slight convexity of the blade makes for reduced friction and sticking during cutting. Made from stainless steel with a very high carbon content, the blade is much tougher and sharper than a standard peeling knife, resulting in a superb cutting performance and edge retention. The ergonomic handle in walnut is hand polished and shaped.
