It heats up quickly and evenly, which helps reduce hotspots and food from burning. This type of pan has a large cooking surface with high sides to create less mess. It's ideal for reducing sauces, browning potatoes, vegetables or meat and for keeping moisture in with the lid. This pan is oven safe to 260°C without the lid. (The glass lid is oven safe to 180°C).
